Saccharomyces is a microscopic eukaryote. Explain the use of Saccharomyces in beer production.

Saccharomyces is a genus of fungi which includes many species of yeast. It is often used in the process of making wine and beer; it ferments the different types of sugar in pre-fermented beer to produce ethanol.Amylase produced by germinated barley or grains breaks down starch from seeds into sugar. In the process of beer production, yeast ferments the sugars and glucose anaerobically, producing CO2 ( which gives the beer its carbonation) and ethanol which stops further fermentation by killing the yeast cells. Different species of yeast are used to produce different types of beers and different beer flavours.
