How should I deal with the LNAT essay?

The markers of the essay are generally looking for persuasion and raw arguing potential. Use your time wisely. In the first five minutes, you have a choice of essays; usually, it is sound to get rid of any contentious topics (i.e abortion, capital punishment) because they are harder to discuss without bringing emotive statements and personal prejudice, which weakens your argument perhaps without you realising it. It is better to pick a dull subject for which you can isolate solid reasons and counter-arguments and deploy them in a solid, logical manner without becoming distracted, or feeling the need to end up supporting one particular side of the debate. Use the second 5-10 minutes to plan a structure of arguments, backed up with evidence, and then counter-arguments which you will knock down. This looks very impressive and is similar to what you are expected to do in your exams at degree level. This should give you at least 30 minutes to write. Don't forget to check spelling, punctuation and grammar as you go.
