Which enzymes are involved in digestion?

Several enzymes are involved in digestion. Amylase is produced by the salivary glands and pacreas and starts working as soon as food is ingested, breaking down starch into maltose in the mouth and also the small intestine. Protease breaks down proteins into amino acids in the stomach and small intestine. It is produced by the stomach and the pancreas. Lipase breaks down fats into fatty acids and glycerol in the small intestine and is produced by the pancreas. Maltase is produced and works in the small intestine, breaking down maltose into glucose.
